Kitchen Aid Mixer + some

My goal is to actually use my mixer over Spring Break. We got the mixer for one of my bridal showers last year from Ben's parents.... it has at least made it out of the box. I have all intentions of using it all the time but then I just don't feel like cooking or we are super busy. My goal is to make bread in it, pizza crust and some cookies Hopefully cookies from my new cookbook Ben's mom made for me of family recipes. :) I will keep you posted on my progress. I have this week to pick my recipes and make a shopping list!

I would also like to get my pictures from my camera onto our home computer. I have no room on my memory card because I still have pictures on it from TWO years ago.

I never realized being a first year teacher would be so rewarding yet stressful. I can not wait to have certainty of my job for next year. This could be months but it will help with planning for next year and all my ideas for my classroom.

Pummelo

Recently my husband started a job at Walmart in the produce section. As he had been working he has started to ask me what all these fruits are. I told him to buy some and we would start trying them. First was the Pummelo. Mind you my husband is picky, VERY picky. But he brought it home and I started to peel this HUGE fruit.

He hated it.
Me: I thought it didn't really have a taste but only ate 1/4 of it since it was so big. I probably won't try one again. It also left a weird after taste and I had to drink water.

One Month


Has it really been a month?

I can not even explain what has all happened in just one short month. I really think that this month was the craziest month of my teacher career so far (I won't say ever because March is shaping up just the same). It started with Spirit week at school where the students were crazy and me becoming an aunt!!! I love my nephew and wish I could get up to see him more. I am only 20 minutes away but always busy.

Then an observation WEEK, okay, I don't get observed for the whole week but they don't tell you when they are coming. Of course he waited until Thursday afternoon to show up. I guess at least it wasn't Friday right?! This week was followed by parent-teacher conferences and a short week at school that resulted in a new student. New students in the MIDDLE of the year are usually not a good thing! As a first year teacher I am blessed with a WONDERFUL class, (knock on wood right!?) but one can change them all. This one has tried... But within the last week I have reminded him that he is NOT in charge. It's worked for the most part.... plus reminding him I will call home helps.

THEN it is always wonderful when you hear are parent is calling the superintendent complaining. I got lucky on this one, its not about ME! (small celebration) but I am still concerned. I have a meeting Monday with many people from administration....

So as I continue the next 3 1/2 weeks until Spring Break, with no relief and students who are just as ready for spring as I am... I stay positive and trying to stay motivated. I have started many new routines and practices that should help.

Life is too short to worry....

I am constantly worrying about money, school, loans, and just about anything you can think of. Not saying I will ever stop worrying but I hope I can enjoy life while worrying. One major thing I have thought about lately is babies. My sister is "past" due and will be having her baby by Thursday if not sooner.

Ben and I have been together for 9 years (on Feb. 18th). We got married this past summer and we have talked about the right time to have our own children. Being a new school teacher I hope to plan it out (if that's possible) I would like to have a child around next summer. This seems like a LONG time to wait but I know God has his plans just like I worry about my plans.

Lately, since Saturday I have been praying and worrying about a family in my hometown community. I did not know this family personally but its a small close knit Christian community. Saturday my mother-in-law called about a horrible case she had at work. She was in tears and needed comfort that we were all okay. She said she had a patient that she met with on the previous Monday for a tour of the maternity floor. Saturday she was in the ER with this family. The couple had been in a horrible car accident where a semi hit them. The mother passed away and the baby was delivered but unresponsive. The father was also in the ER (was released that night). I can't even put into words the story to make it sound right. I can not imagine the thoughts and feelings of the family or my mother-in-law. I found out Saturday night who this person was and how close of a connection I had to his family. He was a tech guy at my school and is best friends with a guy I knew well. I had close contact in middle school with both of them but can't say we are more than acquaintances.

As I said I am from a small, close knit community. This community has reached out to this family and God for prayers for their little girl who is struggling in NICU. Her name is Miranda and is adorable. The father has kept a blog since the day they became pregnant and its heartbreaking to imagine.

SNOW DAY!

oh wait, I would have stayed home anyways. I LOVE snow days but not snow days that I have to stay in bed all day sick. I have been fighting this all week and have been looking forward to having a snow day this week however so I didn't have to use a sick day. I wish I had the motivation to post pictures from our ice festival..... but I can't find the cord since we moved.

My sister's baby didn't come during the storm like we thought, but I'm sure it will be here within the week. Hopefully I find that cord soon so we can post pictures!

Caramel Delights :)

I LOVE Girl Scout cookies, more than I should. My favorite being Caramel Delights (or their formal name Samoas)... I came across an article for ways to make the cookies at home! Here is the recipe (and some other cookies) which I have yet to try but want to soon. Yummy!

I'm adding part of the article here in case I need a quick reference later.

Here is a recipe for homemade Samoas that are easy to make—maybe a little time consuming—but absolutely worth it. And these will make enough that you won’t run out quickly. You may even want to share some.

Homemade Girl Scout Cookies: Samoas

2 sticks (1 cup) unsalted butter at room temperature
1 cup superfine sugar (or granulated)
1 large egg
1/2 teaspoon pure vanilla extract
1 teaspoon kosher salt
3 cups unbleached, all-purpose flour
Dipping Caramel (recipe follows)
1 cup unsweetened shredded coconut (available at health food stores)
12 ounces of chocolate chips

1. In the bowl of an electric mixer fitted with the paddle attachment, cream together butter and sugar. Beat until light and fluffy. Add in egg and beat until well incorporated, scraping down the bowl, if necessary. Add in vanilla. Beat until smooth. With mixer on low, add in salt and flour. Mix until completely incorporated and dough is uniform. Pull dough together and shape into a cylinder with a diameter of about 2 1/2 inches. Wrap in parchment paper and freeze for at least 25 minutes.

2. Preheat oven to 350 degrees. Slice dough into 1/8 inch disks and place on baking sheets, about an inch apart. Once you have made 30 cookies, wrap up the cookie dough, freeze, and save for another time. Use a tiny circle shaped cookie cutter or a large round cake decorating tip to cut a hole in the center of each disk. Refrigerate for an additional 10 minutes. Bake for 8 minutes, or until crisp. Let cool completely.

3. Add coconut into the caramel. Warm the caramel in the microwave for about 10 seconds if necessary. Take cooled cookies and gently dip them completely in the caramel. Place on a parchment paper lined baking sheet. Freeze until set, about 5 minutes.

4. Melt chocolate in a microwave safe bowl in 30 second intervals, stirring well after each interval, until fully melted. Place the caramel coated cookies in the chocolate. Use a fork to pull them out of the chocolate and place them on a parchment line cookie sheet. Use the chocolate still on the fork to drizzle stripes over the top of the cookies. Refrigerate until set.

Dipping Caramel

1 1/2 cups granulated sugar)
4 tablespoons corn syrup
6 tablespoons water
pinch of salt
6 tablespoons butter
6 tablespoons cream (DO NOT use plain whipping cream)
1 1/2 teaspoons pure vanilla extract

1. In a heavy bottomed saucepan with high sides, combine sugar, corn syrup, water, and salt. Whisk until combined, and set over medium-low heat. Swirl the pan every now and then to help distribute the heat. Use can use a pastry brush dipped in water to brush the sugar crystals down the sides of the saucepan. When the sugar dissolves completely, raise the heat to medium. When it comes to a boil, watch very carefully for the bubbles to become more viscous (this means that the water has evaporated and that it is ready to go through the candy stages). As it is bubbling away, you want it to turn a deep amber color. When it does, remove the heat and, working quickly, use the spoon to scoop up a small amount of the candy and drop it into the small glass of water. If the blob turns hard like lollipop, then it is ready. If the blob is still soft, put the pan back on the heat. Keep testing until the candy is hard. Remove from heat.

2. Whisk in butter, 6 tablespoons of cream, and vanilla (Careful here, as the mixture should bubble violently for about 10 seconds). If the caramel isn’t smooth right away, return the pan to low heat and whisk until smooth.

This is the best thing I have seen in awhile. I had a great laugh when I saw this on Ellen today. What a great picture for the front cover of a children's book.

Internet at HOME!

I finally have internet at home. I have not had this pleasure since the middle of summer and I have to say it is making me more productive in everything! I hope to be able to post pictures now and blog more. I will be able to lesson plan at home and come up with better ideas for school since I work better once I have taken a small break from the students.

I also bought Zumba for the Wii... I hope I enjoy this just as much as group Zumba and lok forward to taking out of the box and playing. (Once I make sure I got a good price on it, it was a splurge at the store last night)

Its a New Year!

Just for those who do read this.... which is probably just Angi who checks to see if I do. I plan to start writing again this year. Once we get internet at home it will be easier to keep up. My blog will be more about my marriage and teaching rather than crafts but maybe I will have something cool to share once in awhile.

A note from school today.... teacher says "What is 8-3?" Multiple students: "2,4, NO IT's 3!" Too funny!!!!
